Pedro’s was the first Spanish restaurant in town back in the 1980s and lamb shoulder quickly became their signature dish. After losing their restaurant in the earthquakes, Pedro’s moved into a container and became Pedro’s House of Lamb choosing to cook that one dish, and cook it well. And boy, do they. They’ve been able to tap into the export market of New Zealand lamb (the best stuff we usually have to travel overseas to enjoy), cook it in the Spanish way and serve it with scalloped potatoes. The meat is so tender it’s literally falling off the bone.

A decent sized serving designed to take home to feed up to three mouths, this is a very handy way to provide your loved ones with a hearty roast be it Sunday or any other day of the week.
