We dust off our hands of flaky pastry for a moment to chat to Kirsty Schmutsch, the woman behind the goodness at Pembroke Pâtisserie’s Thursday stall.
What’s your background?
I’ve worked for many years in bars, cafés, restaurants and hotels, and also for a stint as a cheesemaker, while my partner Matt has had 20 years experience as a pastry chef both here in New Zealand and abroad. I’ve also studied French and completed a Master’s Degree in European Studies at Canterbury University, so not surprisingly, our work is influenced in a big way by traditional French baking. We both have a massive passion for food made well, and for sharing our love of that with other good people, so to be able to supply our products all around Wanaka makes us very happy.
Why have you invested in Wanaka?
Both Matt and I have travelled overseas a lot, and we moved here in 2012 after a year in Melbourne following the Christchurch earthquake, but being in a setting as beautiful as Wanaka where we have such an abundance of summer produce available in Central Otago – it totally adds to our passion to make something new, exciting and delicious. Pembroke is the historical name for Wanaka itself, so it’s thanks to this place that Pembroke Pâtisserie was born at all.
What can we find at Pembroke Pâtisserie?
Anything from gingerbread biscuits and oatcakes to canelé, cronuts, florentines, tarts, brownies, croissants, eclairs, danishes and macarons. We mix it up seasonally! Often our ingredients come from locals growing them nearby, so as much as we can, we support local suppliers.

Find us down at Wanaka Artisan Market every Thursday from 3:00 – 6:00pm, order some of our products off our website, or find us at local eateries around Wanaka.
