In an unexpected pocket of Colombo Street in Sydenham lies The Fermentist, a microbrewery, tap room and cafe you’ll want to get to know. Enter through the large front doors on the main street, or park at the back and find your way in through the open working brewery to the beautiful, dimly lit space.

Raw concrete floors, high ceilings and dark walls are complemented by a stylish fit out by local Joska & Sons (Gold Medal winner at Best Awards 2018), creating a relaxed yet sophisticated atmosphere that makes The Fermentist approachable and comfortable at any time of the day. Outdoors, an edible garden surrounds the seating area, which attracts the sun late into the afternoon. Pure wool blankets provide comfort during the cooler months.

At the heart of everything here is sustainability. Not just as a gimmick, but in the real sense of it. The good people behind the scenes here are on a mission to show the world that things can be done differently in the hospitality industry. The Fermentist limits food waste, uses its own solar power, gathers rainwater for irrigation, recycles and implements a thorough waste management system, supports local farmers and producers, makes everything possible on site (preserves, sauces, even vegetarian chorizo) and boasts an entirely meat free menu. The Fermentist is so committed to keeping its carbon footprint minimal, that the brewers are even experimenting with raw beer in order to cut down on the use of power.

For now however, beer is brewed in the traditional manner, right here by a small team of two. The brews are accessible, with loads of flavour and a great variety of options from staples such as the Kiwi Pale Ale to limited seasonal brews that stick around only for a day or two. Go for a tasting paddle to give your tastebuds a ride or experience the in house special, the Beer Cocktail. Local workers will be pleased to find a number of low alcohol options, along with house-brewed kombucha. The Fermentist beers are also available from well-stocked supermarkets and liquor stores within the city.

Open from breakfast (beer with brunch anyone?) to lunch and dinner, it’s always a good time to pop into The Fermentist.
